BY JOSIE SWINDLER

MaryBeth went from 240 pounds to 155 pounds by adopting a healthier lifestyle!
My turning point: After the birth of my third child in October 2002, the baby weight didn’t come off easily. Age wasn’t on my side anymore, and I didn’t want a life ahead of me filled with weight-related health issues.

My slim-down techniques: I found healthy ways to kick-start my metabolism in the morning. I made exercise a priority and starting eating and cooking organic food as often as possible.

Kept the weight off: One year.

My best motivator: Remembering how unhealthy I used to be.

My greatest temptation: Really great cheese, like Jarlsberg. I eat some as a treat on special occasions.

My favorite diet food: I love putting organic peanut butter on whole-grain flax-seed bread.

My snacking tips: I eat yogurt, walnuts, almonds, bananas and oranges.

My exercise routine: I do spinning (a biking class at the gym) five times a week for 45 minutes.

Slim-down advice: Try a few types of exercise until you find a form of movement that you enjoy. Also, give healthy foods a chance—you’ll grow to love them.

The payoff: I can carry my 3-year-old son up the stairs without my knees hurting. And I’ve never felt better, both physically and emotionally.
